The global food system accounts for as much as one third of total greenhouse gas emissions and contributes significantly to the disruption of ecological processes and ecosystems, and the inhumane treatment of animals. Those employed in the food system are often underpaid, see the shrinking of rural  communities with the industrialization of farming, and often experience dangerous working conditions. Institutions and citizens can leverage their buying power to begin to change the way these systems work. WashU is committed to enhancing direct access to fresh, local food on campus as well as increasing campus awareness of sustainable and healthy food options. Learn more Green Monday By eating vegetarian one more day a week, WashU can reduce carbon emissions by as much as 5,000 metric tons annually.
